Description

Spinach and Feta Frittata is a quick, protein-packed breakfast or brunch with wilted spinach, fluffy eggs, and tangy feta cheese.


Ingredients

8 large eggs

1/2 cup milk

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil or butter

2 cups fresh spinach, chopped

1/2 cup crumbled feta cheese

1/2 teaspoon garlic powder (optional)

2 tablespoons fresh parsley or chives, chopped (optional)


Instructions

1. Preheat oven to 375°F.

2. Whisk eggs, milk, salt, pepper, and garlic powder.

3. Heat oil in oven-safe skillet.

4. Sauté spinach 2–3 minutes until wilted.

5. Pour egg mixture over spinach.

6. Sprinkle feta on top.

7. Cook on stovetop 2–3 minutes until edges set.

8. Transfer skillet to oven and bake 15–18 minutes.

9. Remove and let rest 5 minutes.

10. Slice into wedges and garnish.

Notes

Use a mix of cheeses for extra flavor.

Add sautéed onions, peppers, or mushrooms.

Freeze individual slices for meal prep.

Serve with toast or salad for a complete meal.
