Description
Sourdough Discard Focaccia is a soft, airy bread with a golden crust and rich flavor. This easy recipe uses sourdough discard without long fermentation.
Ingredients
1 cup sourdough discard
1 cup warm water
2 tablespoons olive oil, plus more for topping
1 tablespoon sugar
1 teaspoon salt
2 1/2 cups all-purpose flour
2 teaspoons instant yeast
Optional toppings: rosemary, flaky salt, garlic
Instructions
1. Mix sourdough discard, warm water, olive oil, sugar, and salt in a large bowl.
2. Add flour and yeast and stir until a sticky dough forms.
3. Cover and rest for 30–45 minutes.
4. Transfer dough to an oiled pan and stretch gently.
5. Drizzle with olive oil and dimple the surface.
6. Add optional toppings.
7. Bake at 400°F (205°C) for 20–25 minutes until golden.
Notes
Sticky dough is normal for focaccia.
Use olive oil on hands when shaping.
Great for sandwiches or dipping.
