Description
Smoky Carrot Dip is a creamy, flavorful dip made with roasted carrots, garlic, and smoked paprika. Perfect for parties, snacking, or a healthy mezze spread.
Ingredients
1 lb carrots peeled and chopped
2 tablespoons olive oil
1 teaspoon smoked paprika
1 garlic clove minced
2 tablespoons tahini
1 tablespoon lemon juice
1/2 teaspoon salt
1/4 teaspoon black pepper
2–3 tablespoons water as needed
Optional garnishes:
Chopped parsley
Olive oil drizzle
Toasted sesame seeds
Instructions
1. Preheat oven to 400°F (200°C) and line baking sheet.
2. Toss chopped carrots with olive oil, smoked paprika, salt, and pepper.
3. Spread evenly on baking sheet and roast 20–25 minutes until tender.
4. Cool slightly.
5. Combine roasted carrots, garlic, tahini, and lemon juice in food processor.
6. Blend until smooth, adding water as needed.
7. Taste and adjust seasoning.
8. Transfer to bowl and garnish with parsley, olive oil, or sesame seeds.
Notes
Add chipotle powder for extra smoky flavor.
Serve warm or chilled.
Blend in roasted red peppers for richer dip.
Use colorful carrots for vibrant presentation.
Pair with pita, crackers, or raw veggies.
