Description

34 lb corned beef brisket with spice packet

10 small red potatoes, halved

4 carrots, peeled and cut into 2-inch pieces

1 small head cabbage, cut into wedges

1 large onion, quartered

4 cups beef broth

2 tablespoons Dijon mustard (optional)


Instructions

1. Place corned beef in slow cooker, fat side up

2. Pour beef broth over meat

3. Add onion, carrots, and potatoes around beef

4. Cover and cook on low 8–9 hours or high 4–5 hours

5. Add cabbage wedges 1 hour before serving

6. Continue cooking until cabbage is tender

7. Remove meat and vegetables, slice beef against the grain

8. Serve with mustard if desired
