Description
Shrimp Scampi Linguine is a quick, flavorful pasta dish with garlicky butter sauce, juicy shrimp, and tender linguine.
Ingredients
Linguine pasta
Large shrimp, peeled and deveined
Olive oil
Unsalted butter
Garlic, minced
Chicken/vegetable stock
Lemon juice and zest
Red pepper flakes (optional)
Fresh parsley, chopped
Salt and black pepper
Grated Parmesan cheese (optional)
Instructions
1. Cook linguine according to package instructions. Drain and set aside, reserving some pasta water.
2. In a large skillet, heat olive oil and butter over medium heat.
3. Add minced garlic and sauté for 1–2 minutes until fragrant.
4. Add shrimp, season with salt, pepper, and optional red pepper flakes. Cook until shrimp turn pink and opaque, about 2–3 minutes per side.
5. Pour stock and lemon juice, simmer for 2 minutes.
6. Add cooked linguine to the skillet and toss to coat in the sauce. Add reserved pasta water if needed to loosen the sauce.
7. Stir in chopped parsley and lemon zest.
8. Serve immediately, optionally topped with grated Parmesan cheese.
Notes
Use fresh or frozen shrimp, but thaw completely before cooking.
Swap linguine with spaghetti, fettuccine, or angel hair pasta.
Add cherry tomatoes or spinach for extra color and nutrition.
For a creamier sauce, stir in a splash of heavy cream or mascarpone.
Garnish with lemon wedges for extra brightness.
