Description

Ingredients

2 pounds Yukon Gold potatoes thinly sliced

2 large leeks cleaned and sliced

2 tablespoons butter

2 cups heavy cream

1 cup whole milk

2 cloves garlic minced

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon dried thyme

1 cup shredded Gruyère or cheddar cheese optional

2 tablespoons chopped parsley


Instructions

1. Preheat oven to 375°F and grease a baking dish

2. Cook sliced leeks in butter until soft

3. Add garlic and cook briefly

4. Whisk cream milk salt pepper and thyme

5. Layer potatoes and leeks in baking dish

6. Pour cream mixture evenly over layers

7. Top with cheese if desired

8. Cover with foil and bake 40 minutes

9. Remove foil and bake 20–25 minutes until golden

10. Rest 10 minutes before serving
