Description
Roasted Radish Salad is a healthy spring salad made with oven-roasted radishes, fresh greens, and a bright lemon dressing.
Ingredients
2 cups fresh radishes halved
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
3 cups mixed salad greens
1/4 cup thinly sliced red onion
1/4 cup crumbled feta cheese
2 tablespoons lemon juice
1 tablespoon olive oil for dressing
Optional chopped fresh parsley
Instructions
1. Preheat oven to 400°F (200°C).
2. Wash trim and halve radishes.
3. Place radishes on baking sheet and drizzle with olive oil.
4. Season with salt and pepper.
5. Roast 18 to 22 minutes until tender.
6. Let radishes cool slightly.
7. Combine greens and red onion in bowl.
8. Add roasted radishes.
9. Whisk lemon juice and olive oil for dressing.
10. Drizzle dressing over salad.
11. Sprinkle feta and parsley.
12. Toss gently and serve.
Notes
Add roasted asparagus or carrots for variation.
Goat cheese can replace feta.
Add toasted nuts for crunch.
Arugula can replace mixed greens.
Serve radishes warm for best flavor.
