Description

Rhubarb Pie is a classic dessert featuring tangy rhubarb in a sweet, flaky crust, perfect for spring and summer gatherings.


Ingredients

2½ cups all-purpose flour

1 teaspoon salt

1 cup unsalted butter, cold and cubed

68 tablespoons ice water

4 cups rhubarb, chopped

1½ cups granulated sugar

¼ cup all-purpose flour

1 teaspoon vanilla extract

½ teaspoon ground cinnamon (optional)

1 tablespoon butter, cut into small pieces


Instructions

1. Prepare pie crust with flour, salt, butter, and ice water

2. Chill dough 30 minutes

3. Preheat oven to 400°F

4. Roll out dough and fit into 9-inch pan

5. Combine rhubarb, sugar, flour, vanilla, and cinnamon

6. Pour filling into crust and dot with butter

7. Cover with top crust, seal edges, and cut vents

8. Bake 45–50 minutes until golden

9. Cool 2 hours before slicing
