Description

Ingredients

4 cups chopped fresh rhubarb

3 cups granulated sugar

1 tablespoon lemon juice

1 teaspoon vanilla extract (optional)

Optional: 1/2 teaspoon ground ginger or cinnamon


Instructions

1. Wash and chop rhubarb into 1/2-inch pieces.

2. Combine rhubarb, sugar, and lemon juice in a saucepan.

3. Stir over low heat until sugar dissolves.

4. Bring mixture to a boil over medium heat, stirring frequently.

5. Simmer 15-20 minutes until thickened.

6. Optional: stir in vanilla or spices.

7. Test jam consistency on a chilled plate.

8. Remove from heat and cool slightly.

9. Pour into sterilized jars and refrigerate or process for long-term storage.

Use firm fresh rhubarb.
