Ingredients
4 cups chopped rhubarb
1 cup granulated sugar
2 tablespoons all-purpose flour
1/2 teaspoon vanilla extract
1 cup rolled oats
1/2 cup brown sugar
1/2 cup all-purpose flour
1/2 teaspoon ground cinnamon
1/2 cup unsalted butter, melted
Optional: chopped nuts
Instructions
1. Preheat oven to 375°F and grease baking dish.
2. Mix rhubarb, granulated sugar, 2 tablespoons flour, and vanilla extract.
3. Pour into baking dish.
4. Mix oats, brown sugar, 1/2 cup flour, cinnamon, melted butter, and optional nuts until crumbly.
5. Sprinkle crumble over rhubarb.
6. Bake 35-40 minutes until topping is golden and filling is bubbly.
7. Cool slightly before serving.
8. Optional: serve with whipped cream or ice cream.
Notes
Use fresh or thawed frozen rhubarb.
Add strawberries for sweet-tart flavor.
Include nuts for added crunch.
Adjust sugar to taste.
