Rhubarb Crumble Bars are tangy, buttery dessert bars with a golden crumble topping, perfect for dessert, brunch, or gifting.
Ingredients
1 ½ cups all-purpose flour
½ cup granulated sugar
½ teaspoon baking powder
¼ teaspoon salt
¾ cup unsalted butter cold cubed
2 cups chopped rhubarb
¾ cup granulated sugar
1 tablespoon cornstarch
1 teaspoon vanilla extract
½ teaspoon orange zest optional
Instructions
1. Preheat oven and prepare pan
2. Mix flour sugar baking powder salt and cut in butter
3. Press two-thirds of mixture for crust
4. Bake crust 12-15 minutes
5. Mix rhubarb sugar cornstarch vanilla and zest
6. Spread filling over crust
7. Sprinkle remaining crumble on top
8. Bake 30-35 minutes
9. Cool completely
10. Optional dust with powdered sugar before serving
