Red Beans and Rice is a hearty Southern dish made with creamy beans, beef sausage, and warm spices served over fluffy rice.
Ingredients
1 pound dried red kidney beans
1 tablespoon olive oil
1 medium yellow onion, diced
1 green bell pepper, diced
2 celery stalks, diced
3 cloves garlic, minced
12 ounces beef sausage, sliced
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon smoked paprika
1 teaspoon dried thyme
1/2 teaspoon cayenne pepper (optional)
1 bay leaf
6 cups water or beef broth
2 cups long-grain white rice
Instructions
1. Soak and drain beans
2. Cook vegetables in olive oil
3. Brown beef sausage
4. Add beans and seasonings
5. Add liquid and simmer
6. Mash beans to thicken
7. Cook rice separately
8. Serve beans over rice
