Description

Crispy biscuit base, fruity raspberry jam, and fluffy marshmallow topping make this Raspberry Marshmallow Slice a no-bake, sweet, and crowd-pleasing treat.

Ingredients

Scale

200g plain biscuits (digestive or tea biscuits), crushed

100g unsalted butter, melted

1 cup raspberry jam

250g marshmallows

1/4 cup water

200g white chocolate, melted (optional)

Instructions

1. Line a square baking pan with parchment paper.

2. Mix crushed biscuits with melted butter and press into the base.

3. Spread raspberry jam evenly over the biscuit base.

4. In a saucepan, heat marshmallows with water over low heat, stirring until melted and smooth.

5. Pour the marshmallow mixture over the jam layer and smooth the top.

6. Chill in the fridge for at least 2 hours until set.

7. Optional: drizzle melted white chocolate over the top before slicing.

8. Cut into squares or rectangles and serve.

Notes

Use fresh raspberries blended into the jam for natural flavor.

Add crushed nuts on top for extra crunch.

Swap marshmallows for vegan marshmallows to make it plant-based.

Decorate with chocolate shavings or freeze-dried raspberries for a festive touch.
