Description
Spring Radish Salad is a crisp, refreshing, and colorful side with radishes, cucumber, and herbs tossed in a light lemon vinaigrette.
Ingredients
1 bunch radishes thinly sliced
1 medium cucumber thinly sliced
2 tablespoons fresh parsley chopped
1 tablespoon fresh dill chopped optional
2 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon honey or maple syrup
Salt and pepper to taste
1/4 cup crumbled feta optional
Instructions
1. Thinly slice radishes and cucumber and place in a mixing bowl.
2. Add parsley and dill if using.
3. Whisk together olive oil, lemon juice, honey, salt, and pepper.
4. Pour dressing over vegetables and toss evenly.
5. Optional: sprinkle feta on top before serving.
6. Serve immediately or chill 10–15 minutes.
Notes
Use a mandoline for uniform slices.
Add radish greens or red onion for extra flavor.
Top with nuts or seeds for crunch.
