Ingredients
4 large eggs
1 cup milk (dairy or plant-based)
1/2 cup pumpkin puree
1 tsp vanilla extract
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground ginger
8 slices thick bread (brioche or challah)
Butter or oil for cooking
Instructions
1. Whisk eggs, milk, pumpkin, vanilla, cinnamon, nutmeg, and ginger together.
2. Heat skillet over medium heat and add butter.
3. Dip bread slices in mixture, coating both sides.
4. Cook 3-4 minutes per side until golden.
5. Serve with maple syrup, powdered sugar, and fresh fruit.
Notes
Use slightly stale bread for best absorption.
Add orange zest for a fresh flavor twist.
For vegan option, use flax eggs and plant milk.
