Description
Soft, moist pumpkin bars topped with creamy frosting, perfect fall dessert.
Ingredients
2 cups all-purpose flour
2 tsp baking powder
1 tsp baking soda
½ tsp salt
2 tsp ground cinnamon
1 tsp ground nutmeg
1 tsp ground ginger
1 cup granulated sugar
1 cup brown sugar, packed
1 cup vegetable oil
4 large eggs
1 (15 oz) can pumpkin puree
8 oz cream cheese, softened
½ cup unsalted butter, softened
2 cups powdered sugar
1 tsp vanilla extract
Instructions
1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
2. Whisk flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
3. Beat granulated sugar, brown sugar, and oil until smooth.
4. Add eggs one at a time, then stir in pumpkin puree.
5. Gradually fold in dry mixture until combined.
6. Spread batter evenly in pan and bake 30–35 minutes.
7. Cool completely before frosting.
8. Beat cream cheese and butter until creamy.
9. Add powdered sugar and vanilla, beat until smooth.
10. Frost cooled bars, slice, and serve.
Notes
Add chopped nuts for crunch.
Use maple extract for seasonal frosting twist.
Bars freeze well without frosting.
