Ingredients
4 boneless, skinless chicken breasts
1 cup pineapple juice
½ cup brown sugar
2 tablespoons soy sauce
2 teaspoons cornstarch
1 tablespoon olive oil
½ teaspoon garlic powder
½ teaspoon black pepper
Pinch of salt
Pineapple slices or chunks, for garnish
Fresh parsley or cilantro, for garnish
Instructions
1. Combine pineapple juice, brown sugar, and soy sauce in a saucepan. Bring to a gentle boil.
2. Mix cornstarch with water and stir into the pineapple mixture. Cook until thickened.
3. Rub chicken with olive oil, garlic powder, salt, and pepper.
