Description

Pickled Cucumbers and Onions are crisp refrigerator pickles with a sweet and tangy vinegar brine. Perfect refreshing side dish.


Ingredients

Scale

2 large cucumbers, thinly sliced

1 small red onion, thinly sliced

1 cup white vinegar

1/2 cup water

1/2 cup granulated sugar

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon celery seeds (optional)


Instructions

1. Slice cucumbers and onions and place in bowl or jar.

2. Heat vinegar, water, sugar, salt, and pepper until sugar dissolves.

3. Remove from heat and cool slightly.

4. Pour brine over cucumbers and onions.

5. Add celery seeds if using.

6. Stir gently to combine.

7. Cover and refrigerate at least 1 hour.

8. Serve chilled for best flavor.

Notes

Use fresh cucumbers for best crunch.

Add fresh dill for dill pickle flavor.

Include garlic or red pepper flakes for extra flavor.

Reduce sugar for less sweetness.
