Ingredients
1 1/2 cups graham cracker crumbs
6 tablespoons unsalted butter, melted
16 oz cream cheese, softened
1/2 cup granulated sugar
1 teaspoon vanilla extract
1/2 teaspoon peppermint extract
1 cup heavy cream, whipped
1/4 cup crushed peppermint candies
Optional: mini chocolate chips for garnish
Instructions
1. Combine graham cracker crumbs and melted butter; press into mini muffin liners. Chill 10 minutes.
2. Beat cream cheese until smooth; add sugar, vanilla, and peppermint extract; beat until creamy.
3. Fold in whipped cream until combined.
4. Spoon cheesecake mixture over crust; smooth tops.
5. Sprinkle crushed peppermint candies on top.
6. Chill 2 hours until firm.
