Ingredients
4 cups fresh or frozen peas
1 medium onion, diced
2 cloves garlic, minced
2 medium carrots, diced
2 celery stalks, diced
4 cups vegetable or chicken broth
2 tablespoons olive oil
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon dried thyme
Optional: fresh parsley or mint for garnish
Instructions
1. In a large pot, heat olive oil over medium heat and sauté onion, garlic, carrots, and celery for 5–7 minutes.
2. Stir in broth, peas, salt, pepper, and thyme. Bring to a boil, then reduce heat and simmer 20–25 minutes.
3. Blend the soup with an immersion blender or regular blender until smooth.
4. Adjust consistency with extra broth if needed and season to taste.
5. Serve hot, garnished with parsley or mint.
Notes
Use split peas for a thicker soup.
Add cream or coconut milk for extra richness.
Add cayenne or red pepper flakes for spice.
