Juicy chicken meatloaf flavored with Parmesan and herbs, perfect for weeknight dinners.
Ingredients
1 1/2 pounds ground chicken
1 cup breadcrumbs
1/2 cup grated Parmesan cheese
1/2 cup milk
1/4 cup ketchup
1/4 cup finely chopped onion
2 cloves garlic, minced
1 large egg
1 teaspoon dried Italian herbs
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup shredded mozzarella cheese (optional)
Fresh parsley for garnish (optional)
Instructions
1. Preheat oven to 375°F. Grease a loaf pan or line with parchment paper.
2. In a large bowl, combine all ingredients and mix well.
3. Transfer mixture to prepared loaf pan and shape into a loaf.
4. Optionally, sprinkle mozzarella cheese on top.
5. Bake 45-50 minutes until internal temp reaches 165°F and top is golden.
6. Let rest 5-10 minutes before slicing.
7. Garnish with parsley if desired.
Notes
Add finely chopped vegetables for moisture and nutrition.

Prepare ahead of time and refrigerate before baking.
