Ingredients

Scale

1 pound beef sirloin or tenderloin, sliced thin

2 tablespoons olive oil or butter

1 medium onion, finely chopped

2 cloves garlic, minced

8 ounces mushrooms, sliced

2 tablespoons all-purpose flour

1 cup beef broth

1 tablespoon Worcestershire sauce

1 teaspoon Dijon mustard

1 cup sour cream

Salt and black pepper to taste

Fresh parsley for garnish

8 ounces cooked egg noodles

Instructions

1. Slice beef thinly and season with salt and pepper.

2. Brown beef in oil, remove, and set aside.

3. Sauté onions and garlic until fragrant.

4. Add mushrooms and cook until soft.

5. Stir in flour, then whisk in beef broth.

6. Add Worcestershire sauce and mustard, simmer until thickened.

7. Stir in sour cream until creamy.

8. Return beef to pan and simmer briefly.

Notes

For extra richness, stir in a tablespoon of cream cheese.

Use tender cuts for the best texture.

Do not boil after adding sour cream to prevent curdling.
