Ingredients
¼ cup unsalted butter
¼ cup all-purpose flour
3 cups turkey drippings (or chicken stock if needed)
1 teaspoon onion powder
½ teaspoon garlic powder
1 teaspoon fresh thyme (or ½ teaspoon dried thyme)
Salt and black pepper to taste
Instructions
1. In a saucepan, melt the butter over medium heat.
2. Add the flour and whisk constantly for 1–2 minutes to create a golden roux.
3. Slowly pour in the turkey drippings (or stock), whisking continuously to prevent lumps.
4. Add onion powder, garlic powder, thyme, salt, and pepper.
5. Simmer for 6–8 minutes until the gravy thickens and coats the back of a spoon.
6. Adjust seasoning as needed and keep warm until serving.
Notes
Make ahead and refrigerate for up to 3 days.
If no drippings are available, substitute with chicken or vegetable stock.
Add cream at the end for extra richness.
