Creamy no-bake mandarin cheesecake with a buttery graham crust and bright citrus flavor.
Ingredients
2 cups graham cracker crumbs
1/2 cup melted butter
2 tablespoons sugar
16 ounces cream cheese softened
3/4 cup powdered sugar
1 teaspoon vanilla extract
1 cup heavy whipping cream
1 cup mandarin orange segments drained and chopped
1 cup mandarin segments for topping
1/2 cup whipped cream optional
Instructions
1. Combine graham cracker crumbs melted butter and sugar
2. Press mixture into pan to form crust
3. Chill crust for 20 minutes
4. Beat cream cheese and powdered sugar until smooth
5. Mix in vanilla extract
6. Whip heavy cream until soft peaks form
7. Fold whipped cream into cream cheese mixture
8. Fold chopped mandarins into filling
9. Spread filling over crust
10. Refrigerate at least 4 hours until set
11. Top with mandarin segments and whipped cream before serving
Notes
Use well drained mandarins
Add orange zest for stronger citrus flavor
Use digestive biscuits or vanilla wafers for crust variation
