No Bake Kiwi Cheesecake is a creamy, refreshing dessert with a buttery crust and bright kiwi topping, perfect for warm days.
Ingredients
2 cups graham cracker crumbs
½ cup unsalted butter melted
16 ounces cream cheese softened
¾ cup powdered sugar
1 teaspoon vanilla extract
1 cup heavy whipping cream
5 to 6 fresh kiwis peeled and sliced
2 tablespoons granulated sugar
1 tablespoon lemon juice
1 teaspoon cornstarch mixed with 1 tablespoon water
Instructions
1. Mix graham cracker crumbs with melted butter
2. Press into pan and chill
3. Beat cream cheese until smooth
4. Add powdered sugar and vanilla
5. Whip heavy cream to stiff peaks
6. Fold whipped cream into cream cheese
7. Spread filling over crust and chill 4 hours
8. Cook kiwi with sugar and lemon juice
9. Add cornstarch slurry and thicken
10. Cool topping and spread over cheesecake

Chill overnight for best results
Use parchment paper for easy release

Store covered in refrigerator
