Description

A soft, naturally sweet Easy Moist Date Cake made with tender soaked dates, warm spices, and rich flavor.


Ingredients

1 1/2 cups pitted dates

1 cup hot water

1 teaspoon baking soda

1 1/2 cups all-purpose flour

3/4 cup brown sugar

2 large eggs

1/2 cup unsalted butter, softened

1 teaspoon vanilla extract

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/4 teaspoon salt


Instructions

1. Add pitted dates to a bowl, pour hot water over them, and stir in the baking soda. Let soften for 10 minutes.

2. Mash or blend the softened dates into a smooth mixture.

3. Cream the butter and brown sugar until light and fluffy.

4. Add the eggs one at a time and mix in the vanilla extract.

5. Whisk the flour, baking powder, cinnamon, and salt in a separate bowl.

6. Fold the dry mixture into the wet mixture.

7. Stir in the mashed date mixture until smooth.

8. Pour the batter into a greased baking pan.

9. Bake until a toothpick inserted into the center comes out clean.

10. Cool completely before slicing.

Notes

Replace butter with oil for an even softer crumb.

Add chopped walnuts or pecans for texture.

Dust with powdered sugar before serving.

Freeze slices for up to 2 months.
