Description

Minted Pea Purée blends sweet green peas with fresh mint and lemon for a smooth, vibrant spring side dish. It delivers bright flavor, creamy texture, and elegant presentation in just 20 minutes.


Ingredients

Scale

3 cups frozen green peas

2 tablespoons olive oil

2 tablespoons fresh mint leaves

1 tablespoon fresh lemon juice

1 small garlic clove, minced

1/4 teaspoon salt

1/4 teaspoon black pepper

2 to 4 tablespoons warm water as needed


Instructions

1. Boil peas for 2 to 3 minutes until tender and bright green.

2. Drain and cool quickly in cold water.

3. Blend peas with olive oil, mint, lemon juice, garlic, salt, and pepper.

4. Add warm water gradually and blend until smooth.

5. Taste and adjust seasoning.

6. Serve warm or chilled with a drizzle of olive oil.

Notes

Do not overcook peas to maintain bright color.

Blend while peas are slightly warm for smooth texture.

Store refrigerated for up to 3 days.
