Fudgy and refreshing Mint Chocolate Brownies with creamy mint frosting and glossy chocolate ganache. Perfect for holidays or any time you crave a chocolate-mint treat.
Ingredients
For the Brownie Base:
1 cup unsalted butter, melted
1 cup granulated sugar
1 cup brown sugar, packed
4 large eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
1 cup unsweetened cocoa powder
1/2 teaspoon salt
1 teaspoon baking powder
For the Mint Frosting:
1/2 cup unsalted butter, softened
2 cups powdered sugar
2 tablespoons milk
1 teaspoon peppermint extract
A few drops of green food coloring (optional)
For the Chocolate Ganache:
1 cup semi-sweet chocolate chips
1/2 cup heavy cream
Instructions
1. Preheat oven to 350°F (175°C). Line a 9×13-inch pan with parchment paper and lightly grease it.
2. Whisk melted butter, granulated sugar, and brown sugar until smooth. Add eggs and vanilla extract; mix well.
3. Sift in flour, cocoa powder, baking powder, and salt. Stir until the batter is thick and glossy.
4. Pour batter into the pan and bake for 25–30 minutes or until a toothpick comes out with moist crumbs. Cool completely.
5. Make the mint frosting: beat butter, powdered sugar, milk, peppermint extract, and green food coloring until creamy. Spread over cooled brownies. Chill for 20 minutes.
6. For the ganache: heat cream until steaming, pour over chocolate chips, let sit 2 minutes, then stir until smooth.
7. Spread ganache over frosting and chill for 1 hour before slicing.
Notes
For extra flavor, sprinkle crushed peppermint candies on top before the ganache sets. For clean cuts, use a warm knife and wipe between slices.
