Meatloaf Cupcakes with Mashed Potato Frosting are fun, portion-perfect comfort food with juicy beef meatloaf and creamy mashed potatoes.


Ingredients

1 ½ pounds ground beef

1 cup breadcrumbs

¾ cup milk

1 large egg

½ cup onion finely diced

2 cloves garlic minced

⅓ cup ketchup

1 tablespoon Worcestershire sauce

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon paprika

2 pounds russet potatoes peeled and cubed

4 tablespoons unsalted butter

½ cup milk

¾ teaspoon salt

¼ teaspoon black pepper


Instructions

1. Preheat oven and grease muffin tin

2. Mix beef, breadcrumbs, milk, egg, onion, garlic, ketchup, Worcestershire, and spices

3. Divide mixture into muffin cups

4. Bake 22–25 minutes

5. Boil potatoes until tender

6. Mash potatoes with butter and milk

7. Pipe or spoon mashed potatoes onto cupcakes

8. Serve immediately
