Description

Crispy on the outside and creamy inside, these Mashed Potato Cheese Puffs are baked in a muffin tin for a quick, cheesy appetizer or snack.


Ingredients

Scale

3 cups mashed potatoes (chilled)

1 cup shredded cheddar cheese

1 large egg

1/4 cup chopped chives

1/4 cup all-purpose flour

1/2 tsp garlic powder

Salt and pepper to taste

1/2 cup grated Parmesan cheese

Butter or cooking spray for greasing muffin pan


Instructions

1. Preheat the oven to 400°F (200°C) and grease a mini muffin pan.

2. In a large bowl, combine the mashed potatoes, cheddar cheese, egg, chives, flour, garlic powder, salt, and pepper.

3. Mix well until fully incorporated.

4. Form 1-inch balls using a scoop or your hands.

5. Roll each ball in grated Parmesan cheese to coat.

6. Place into greased muffin tin cups and press gently to shape.

7. Bake for 15–20 minutes or until edges turn golden brown and crispy.

8. Cool for a few minutes before removing from the pan.

9. Serve warm with dips or sauces of your choice.

Notes

Use cold mashed potatoes to help the puffs hold their shape.

You can freeze these puffs and bake them later straight from frozen.

For variation, mix in crumbled bacon or jalapeños.
