Ingredients
4 pounds potatoes, peeled and chopped
1 cup milk
½ cup sour cream
4 tablespoons unsalted butter
1 teaspoon salt
½ teaspoon black pepper
1 ½ cups shredded cheddar cheese
½ cup grated Parmesan cheese
1 cup crushed buttery crackers or breadcrumbs
2 tablespoons melted butter for topping
Optional: chopped fresh parsley for garnish
Instructions
1. Preheat the oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
2. Place potatoes in a large pot, cover with water, and boil until tender, about 15–20 minutes. Drain well.
3. Return potatoes to the pot and mash with milk, sour cream, butter, salt, and pepper until smooth and creamy.
4. Stir in 1 cup of cheddar cheese until melted and combined.
5. Spread mashed potatoes evenly in prepared baking dish.
6. Mix crushed crackers or breadcrumbs with melted butter and remaining cheddar cheese; sprinkle evenly on top.
7. Bake uncovered for 25–30 minutes until golden and heated through.
8. Garnish with Parmesan cheese and parsley if desired. Serve hot.
Notes
Use full-fat sour cream and butter for extra creaminess.
Add bacon, caramelized onions, or roasted garlic for extra flavor.
