Description

Mandarin Orange Poke Cake is a light citrus dessert made with soft cake soaked in orange gelatin and topped with whipped cream and mandarin oranges.


Ingredients

1 box yellow cake mix

Ingredients listed on cake mix box eggs oil water

1 package 3 oz orange gelatin

1 cup boiling water

1 cup cold water

1 can 11 oz mandarin oranges drained

8 oz whipped topping

Optional additional mandarin oranges for garnish


Instructions

1. Preheat oven to 350°F (175°C).

2. Prepare cake batter according to package instructions.

3. Pour batter into greased 9×13-inch pan and bake.

4. Cool cake about 10 minutes.

5. Poke holes evenly across cake using wooden spoon handle.

6. Dissolve orange gelatin in boiling water then add cold water.

7. Pour gelatin mixture slowly over cake.

8. Refrigerate 2 hours until set.

9. Spread whipped topping evenly over cake.

10. Top with drained mandarin oranges.

11. Slice and serve chilled.

Notes

Use homemade whipped cream if preferred.

Add crushed pineapple for tropical flavor.

Garnish with orange zest.

Chill overnight for best flavor.

White cake mix can be used instead of yellow.
