Description
Authentic Louisiana gumbo made with a rich dark roux, tender chicken, and shrimp. Pork-free, hearty, and full of classic Southern flavor.
Ingredients
½ cup vegetable oil
½ cup all-purpose flour
1 large onion, chopped
1 green bell pepper, chopped
2 celery stalks, chopped
4 cloves garlic, minced
1 lb chicken thighs, cut into chunks
6 cups chicken broth
2 bay leaves
1 teaspoon paprika
1 teaspoon dried thyme
½ teaspoon dried oregano
½ teaspoon cayenne pepper
1 teaspoon salt
½ teaspoon black pepper
1 lb shrimp, peeled and deveined
2 tablespoons fresh parsley
2 green onions, sliced
Cooked white rice
Instructions
1. Heat oil in a large pot over medium heat.
2. Whisk in flour and cook, stirring constantly, until dark brown.
3. Add onion, bell pepper, and celery; cook until softened.
4. Add garlic and cook briefly.
5. Add chicken and lightly brown.
6. Slowly stir in chicken broth.
7. Add bay leaves and spices.
8. Simmer uncovered for 40 minutes.
9. Add shrimp and cook until pink.
10. Remove bay leaves.
11. Stir in parsley and green onions.
12. Serve hot over rice.
Notes
Stir roux constantly to prevent burning.
Gumbo tastes better the next day.
