Ingredients
2 pounds small red or Yukon gold potatoes
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup mayonnaise
1/4 cup sour cream
2 teaspoons Dijon mustard
1/2 cup shredded cheddar cheese
1/4 cup chopped green onions
2 tablespoons chopped fresh parsley
Instructions
1. Wash and cube potatoes
2. Boil potatoes until tender and drain
3. Mix mayonnaise, sour cream, Dijon mustard, salt, and pepper
4. Add potatoes, cheese, and green onions; toss gently
5. Garnish with parsley
6. Chill at least 30 minutes before serving
