Ingredients

5 large russet potatoes, peeled and cubed

1 cup sour cream

1/2 cup cream cheese, softened

1 cup shredded cheddar cheese

1/4 cup butter, melted

1/3 cup milk

1 cup chopped green onions

1/2 cup cooked mushrooms

Salt and black pepper to taste


Instructions

1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.

2. Boil potatoes until tender, then drain and mash.

3. Add butter, sour cream, milk, cream cheese, and half the cheddar cheese. Mix until smooth.

4. Season with salt and pepper, then stir in green onions and mushrooms.
