Bright, chewy, and full of lemon flavor, these no-bake treats are perfect for a quick and refreshing dessert.
Ingredients
6 cups Rice Krispies cereal
4 cups mini marshmallows
4 tablespoons unsalted butter
1 tablespoon fresh lemon zest
2 tablespoons fresh lemon juice
1 teaspoon vanilla extract
1/2 cup white chocolate chips (optional)
Pinch of salt
Instructions
1. Grease an 8×8-inch pan or line with parchment paper.
2. Melt butter over low-medium heat in a large saucepan.
3. Add mini marshmallows and stir until melted and smooth.
4. Remove from heat and stir in lemon zest, lemon juice, vanilla, and salt.
5. Pour mixture over Rice Krispies and fold gently to coat.
6. Transfer to pan and press lightly to flatten.
7. Add white chocolate chips on top if using.
8. Cool 30 minutes before slicing.

– Add extra lemon zest for a stronger citrus flavor.
– Mix in freeze-dried raspberries for a fruity twist.
