Ingredients
1 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
2 tablespoons fresh lemon juice
1 teaspoon lemon zest
2 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
Optional: 1/2 cup powdered sugar for rolling
Instructions
1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg, vanilla extract, lemon juice, and lemon zest.
3. In another bowl, whisk together flour, baking powder, baking soda, and salt. Gradually mix into wet ingredients until fully combined.
4. Roll dough into 1-inch balls. Optional: Roll each ball in powdered sugar. Place on prepared baking sheet, spacing 2 inches apart.
5. Bake for 10–12 minutes, until edges are lightly golden. Do not overbake.
6. Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Add more lemon zest for stronger flavor.
Drizzle with a simple lemon glaze for extra sweetness.
Add poppy seeds or white chocolate chips for variation.
Store in an airtight container for up to 5 days.
