Description
Tangy lemon bars with a buttery shortbread crust and smooth lemon filling, dusted with powdered sugar.
Ingredients
1 cup unsalted butter, softened
½ cup granulated sugar
2 cups all-purpose flour
¼ teaspoon salt
1 ½ cups granulated sugar
¼ cup all-purpose flour
4 large eggs
⅔ cup freshly squeezed lemon juice
Zest of 2 lemons
Powdered sugar, for dusting
Instructions
1. Preheat oven to 350°F (175°C) and line pan with parchment.
2. Make crust: beat butter and sugar, add flour and salt, press into pan, bake 15–18 min.
3. Prepare filling: whisk sugar, flour, eggs, lemon juice, and zest until smooth.
4. Pour over crust, bake 20–25 min until set.
5. Cool completely and chill 1–2 hours.
6. Dust with powdered sugar and cut into squares.
Notes
Store at room temp up to 1 day, refrigerate 5–6 days, freeze up to 2 months.
