Description

A hearty and cheesy lasagna soup with ground beef, bow tie pasta, and rich tomato broth.

Ingredients

Scale

1 pound ground beef

1 tablespoon olive oil

1 small onion, chopped

2 cloves garlic, minced

1 can (28 ounces) crushed tomatoes

4 cups beef or chicken broth

1 teaspoon Italian seasoning

½ teaspoon red pepper flakes (optional)

Salt and black pepper to taste

8 ounces bow tie pasta

½ cup grated Parmesan cheese

1 cup shredded mozzarella cheese

Fresh basil or parsley, chopped

Instructions

1. Heat olive oil in a large pot. Cook ground beef until browned, drain excess fat.

2. Add onion and garlic and sauté for 3–4 minutes.

3. Stir in crushed tomatoes, broth, Italian seasoning, red pepper flakes, salt, and pepper. Simmer.

4. Add bow tie pasta and cook until al dente.

5. Stir in Parmesan and mozzarella until melted.

6. Garnish with basil or parsley and serve warm.

Notes

Use mushrooms or lentils for a vegetarian version.

Add extra cheese for a richer flavor.

Store pasta separately if refrigerating.

Freeze soup without cheese for up to 2 months.
