Description

Rustic Irish soda bread with a soft interior and golden crust, perfect for breakfast or alongside hearty meals.


Ingredients

Scale

4 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon salt

1 tablespoon sugar optional

1 ¾ cups buttermilk

2 tablespoons unsalted butter melted optional

½ cup raisins or currants optional


Instructions

1. Preheat oven to 425°F (220°C)

2. Whisk flour, baking soda, salt, and sugar together

3. Add buttermilk (and butter) to flour mixture and stir gently

4. Fold in raisins or currants if using

5. Shape dough into a round loaf and place on parchment-lined sheet

6. Cut an ‘X’ on top and bake for 35–45 minutes

7. Cool before slicing

Notes

Do not overmix the dough for a tender loaf

Cool completely before slicing

Optional: fold in raisins, currants, or seeds
