Ingredients
2 pounds sweet potatoes, peeled and cubed
3 tablespoons olive oil
2 tablespoons honey
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon cinnamon optional
1 tablespoon fresh thyme or parsley chopped optional
Instructions
1. Preheat oven to 425°F (220°C).
2. Peel and cube sweet potatoes evenly.
3. Place in mixing bowl.
4. Drizzle with olive oil and honey; add salt, pepper, and cinnamon.
5. Toss to coat evenly.
6. Spread on parchment-lined baking sheet.
7. Roast 25–30 minutes, tossing halfway.
8. Sprinkle fresh thyme or parsley before serving.

Maple syrup can replace honey.
