Ingredients
2 cups rhubarb chopped
2 tablespoons honey
1 teaspoon vanilla extract
2 cups Greek yogurt
1/2 cup granola
1 tablespoon honey for topping
Fresh mint optional
Instructions
1. Preheat oven to 400°F
2. Place rhubarb on baking sheet
3. Drizzle with honey and vanilla
4. Roast until soft
5. Cool slightly
6. Add yogurt to bowl
7. Top with roasted rhubarb
8. Add granola and honey
9. Garnish and serve
Notes
