Homemade Jaffa Cakes

Description

Soft, fluffy sponge topped with tangy orange jelly and rich chocolate, perfect for homemade Jaffa Cakes.


Ingredients

Scale

3 large eggs

100g caster sugar

100g plain flour

1 teaspoon baking powder

50g unsalted butter, melted

100g orange marmalade

150g dark chocolate

Optional: 1 teaspoon orange zest


Instructions

1. Preheat oven to 180°C (350°F) and line a 12-hole muffin tin with paper cases.

2. Beat eggs and sugar together until pale and fluffy. Gently fold in flour and baking powder, then add melted butter.

3. Divide batter evenly among muffin cases and bake for 10–12 minutes until golden and springy. Cool completely.

4. Warm orange marmalade slightly and spoon a small amount onto each cooled sponge. Allow to set.

5. Melt dark chocolate and spoon over each Jaffa Cake, covering the marmalade. Let chocolate set completely.

6. Serve and enjoy.

Notes

Add orange zest for extra flavor.

Swap orange marmalade for raspberry or lemon curd for variation.

Use milk or white chocolate instead of dark chocolate.

Mini muffin tins work for bite-sized treats.

Store in an airtight container in a cool place.
