Homemade Chocolate Marshmallows, soft, fluffy, and rich chocolate treats made from simple ingredients. Perfect for cozy nights, gifting, or topping hot chocolate.
Ingredients
3 tablespoons water
1 cup granulated sugar
1/3 cup light corn syrup
2 tablespoons cocoa powder
1/8 teaspoon salt
2 large egg whites, at room temperature
1 teaspoon vanilla extract
1/2 cup powdered sugar (for dusting)
1/4 cup cornstarch (for dusting)
Instructions
1. Line an 8×8-inch baking pan with parchment paper and dust with a mix of powdered sugar and cornstarch.
2. In a small saucepan, combine water, sugar, corn syrup, cocoa powder, and salt. Heat over medium, stirring until sugar dissolves, then boil until 240°F (115°C) on a candy thermometer.
3. Whip egg whites in a stand mixer until stiff peaks form.
4. Slowly pour hot syrup into the whipped egg whites while mixing on low, then increase speed and whip until thick and glossy.
5. Beat in vanilla extract until incorporated.
6. Pour the mixture into the prepared pan and smooth the top.
7. Dust with powdered sugar-cornstarch mixture and let set 4–6 hours or overnight.
8. Cut into squares and dust edges to prevent sticking.
Notes
Use freshly sifted cocoa powder for smooth texture.
For mini marshmallows, pipe with a pastry bag.
Store in an airtight container at room temperature up to 1 week.
Freeze wrapped marshmallows up to 2 months.
