Description
Juicy chicken breasts stuffed with herbed goat cheese and baked until golden and tender. This easy dinner feels fancy but takes under an hour.
Ingredients
4 boneless, skinless chicken breasts
4 oz goat cheese, softened
1 tbsp olive oil
1 tbsp fresh parsley, chopped
1 tbsp fresh basil, chopped
1 tsp garlic powder
½ tsp onion powder
Salt and black pepper to taste
1 tbsp lemon juice
½ tsp paprika
2 tbsp breadcrumbs (optional, for topping)
Instructions
1. Preheat oven to 375°F (190°C) and grease a baking dish.
2. In a bowl, mix goat cheese, parsley, basil, garlic powder, onion powder, and a pinch of salt.
3. Cut a pocket into each chicken breast and stuff with the goat cheese mixture.
4. Secure with toothpicks if needed.
5. Rub olive oil and lemon juice on chicken, then season with paprika, salt, and pepper.
6. Place in the baking dish and bake for 25–30 minutes or until golden and cooked through.
7. Sprinkle breadcrumbs on top during the last 5 minutes for extra crunch if desired.
8. Let rest for 5 minutes before slicing and serving.
Notes
Use fresh herbs for best flavor. Substitute goat cheese with feta or cream cheese if preferred.
Avoid overbaking to keep the chicken juicy. The internal temperature should reach 165°F (74°C).
