Description

Ingredients

to 3 pounds beef tenderloin, trimmed

2 tablespoons olive oil

3 tablespoons unsalted butter, softened

3 garlic cloves, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon Dijon mustard (optional)


Instructions

1. Preheat oven to 425°F (220°C) and line a baking sheet with foil.

2. Pat beef dry and tie with kitchen twine.

3. Mix butter, olive oil, garlic, herbs, salt, pepper, and mustard. Rub all over the beef.

4. Sear in a skillet for 2–3 minutes per side until browned.

5. Transfer to rack and roast for 25–30 minutes until internal temp reaches 130°F.

6. Let rest 15 minutes under foil before slicing and serving.

Notes

For medium doneness, roast to 140°F.

Letting the meat rest ensures juicy slices.

Pair with mashed potatoes or green beans for a complete meal.
