A quick, one-pan meal with lean ground turkey, golden potatoes, and aromatic herbs, perfect for a healthy weeknight dinner.
Ingredients
1 pound ground turkey
4 medium potatoes, diced
1 medium onion, finely chopped
3 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon paprika
½ teaspoon dried thyme
½ teaspoon black pepper
½ teaspoon salt (or to taste)
¼ teaspoon red pepper flakes (optional)
¼ cup chopped fresh parsley (for garnish)
Instructions
1. Wash, peel (optional), and dice the potatoes into ½-inch cubes.
2. In a large skillet, heat 1 tablespoon olive oil over medium heat. Add potatoes and cook 8–10 minutes until golden and tender, stirring occasionally. Remove and set aside.
3. In the same skillet, add remaining olive oil and cook ground turkey for 5–7 minutes until browned.
4. Add onion and garlic; cook 2–3 minutes until fragrant. Stir in paprika, thyme, salt, black pepper, and optional red pepper flakes.
5. Return cooked potatoes to the skillet. Mix well and cook 3–5 more minutes until flavors combine.
6. Garnish with fresh parsley and serve hot.
Notes
Add bell peppers, carrots, or zucchini for extra nutrition.
Swap potatoes with cauliflower or sweet potatoes for a low-carb version.
Add cayenne or chili powder for extra heat.
