Description
This Ground Turkey Sweet Potato Bake is a cozy, healthy one-pan dinner with lean protein, sweet potatoes, and veggies. Perfect for meal prep and family dinners.
Ingredients
1 lb ground turkey
2 large sweet potatoes, peeled and diced
1 small onion, diced
2 cloves garlic, minced
1 red bell pepper, diced
1 zucchini, diced
2 tablespoons olive oil
1 teaspoon smoked paprika
1 teaspoon chili powder
½ teaspoon cumin
Salt and pepper to taste
1 cup shredded cheese (optional)
Fresh parsley or green onions for garnish
Instructions
1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
2. Heat olive oil in a skillet over medium heat. Add onion and garlic, sauté until fragrant.
3. Stir in ground turkey and cook until browned. Season with smoked paprika, chili powder, cumin, salt, and pepper.
4. Add bell pepper and zucchini, cooking for another 3–4 minutes.
5. Place diced sweet potatoes in the baking dish, drizzle with olive oil, and toss to coat.
6. Spread the turkey and veggie mixture evenly over the sweet potatoes.
7. Cover with foil and bake for 30 minutes.
8. Remove foil, sprinkle with cheese (if using), and bake uncovered for another 10–15 minutes until sweet potatoes are tender and cheese is melted.
9. Garnish with fresh parsley or green onions before serving.
