Ground Beef Enchilada

Description

Easy ground beef enchiladas baked with red sauce and cheese for a flavorful family dinner.


Ingredients

Scale

1 lb ground beef

1 tbsp olive oil

1 small onion, diced

2 garlic cloves, minced

1 tsp chili powder

1 tsp ground cumin

1 tsp smoked paprika

Salt and black pepper to taste

1 can (15 oz) enchilada sauce

8 flour or corn tortillas

2 cups shredded cheese

Fresh cilantro, chopped

Optional toppings: sour cream, avocado, jalapeños


Instructions

1. Heat olive oil in a skillet, cook onion 3 minutes, add garlic, then beef and cook until browned.

2. Stir in chili powder, cumin, smoked paprika, salt, and pepper.

3. Spread sauce in a 9×13 dish, fill tortillas with beef and cheese, roll, and place seam side down.

4. Pour sauce over tortillas, sprinkle cheese, cover with foil, bake at 375°F for 20 minutes. Remove foil and bake 10 more minutes.

5. Cool slightly, garnish with cilantro and toppings, then serve warm.

Notes

Make it spicier with jalapeños or extra chili powder.

Swap beef for chicken, turkey, or beans.

Assemble ahead and refrigerate before baking.
