Description

A hearty and cheesy casserole with ground beef, rice, vegetables, and melted cheese, perfect for a comforting family dinner.


Ingredients

1 pound ground beef

1 tablespoon olive oil

1 small onion, chopped

2 cloves garlic, minced

1 cup diced bell peppers (optional)

1 cup frozen peas and carrots

1 can (15 ounces) diced tomatoes

1 can (8 ounces) tomato sauce

1 teaspoon Italian seasoning

½ teaspoon smoked paprika

1 teaspoon Worcestershire sauce

Salt and black pepper to taste

2 cups cooked white or brown rice

1 ½ cups shredded cheddar cheese

½ cup Parmesan cheese

Fresh parsley, chopped


Instructions

1. Heat olive oil in a large skillet over medium heat. Cook ground beef until browned and drain excess fat.

2. Add onion, garlic, and bell peppers; cook 3–4 minutes until softened.

3. Stir in diced tomatoes, tomato sauce, Italian seasoning, smoked paprika, Worcestershire sauce, salt, and pepper. Simmer 5–7 minutes.

4. Add cooked rice and frozen peas and carrots; stir to combine and heat through.

5. Sprinkle cheddar and Parmesan cheese over the top. Cover and let melt 5 minutes.

6. Garnish with parsley and serve hot.

Notes

Use lentils or tofu for a vegetarian version.

Try different cheeses like mozzarella or Monterey Jack.

Add extra vegetables like mushrooms, zucchini, or corn.

Spice it up with crushed red pepper flakes.

Store in the fridge for 3 days or freeze portions for later.
